Marinated in a mixture of soy sauce, smoked paprika and Roman cumin and then fried until golden, it becomes crispy and full of flavour. Fresh vegetables such as red cabbage, red onion and avocado add crunch and freshness to the tacos, while lime juice and fresh coriander enhance their unique flavour. INGREDIENTS

Tofu:

  • 400g tofu
  • 2 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoonful of roma cumin
  • 1 tbsp vegetable oil

Vegetables and accompaniments:

  • 8 small corn tortillas
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • 1 cup chopped red cabbage
  • 1/2 cup fresh coriander
  • 1 lime, cut into quarters

Sauce:

  • 1/2 cup vegan mayonnaise
  • 2 tablespoons of lime juice
  • 1 teaspoon maple syrup
  • Salt and pepper to taste

INSTRUCTIONS

Preparation of tofu:

  • Cut the tofu into cubes. Mix the soy sauce, smoked paprika and roma cumin in a bowl. Add the tofu and mix well.
  • In a frying pan, heat the oil. Fry the tofu over a medium heat until crisp and golden, about 10-15 minutes.

Sauce preparation:

  • Mix vegan mayonnaise, lime juice, maple syrup, salt and pepper in a small bowl.

Preparing the tortilla:

  • Warm the tortillas in a dry frying pan or in the oven.

Assembly of tacos:

  • Top each tortilla with a portion of crispy tofu, chopped cabbage, avocado slices, red onion and fresh coriander.
  • Sprinkle with lime juice and pour over the sauce.

NOTES

  • Tofu: To make the tofu crispier, you can coat it in potato flour before frying.
  • Vegetables: You can add other favourite vegetables such as tomatoes or cucumbers to enrich the flavour of the tacos.
  • Sauce: You can add a dash of spicy paprika to the sauce to give it a sharper flavour.
