INGREDIENTS

  • 8 slices of wholemeal or sourdough bread
  • 400g of mushrooms
  • 2 tbsp olive oil
  • 2 cloves of garlic, chopped
  • 1 onion, thinly sliced
  • 2 tablespoons of butter
  • 1 tsp fresh thyme (or 1 tsp dried)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Grated cheese (e.g. parmesan or gruyère, optional)

INSTRUCTIONS

Preparation of mushrooms:

  • Wash and slice the mushrooms.

Mushroom frying:

  • In a large frying pan, heat the olive oil and butter. Add the onion and fry over a medium heat until softened and lightly browned, about 5 minutes.
  • Add the garlic and thyme and fry for a further 1-2 minutes.
  • Add the mushrooms, fry for about 10 minutes until golden and soft. Season with salt and pepper to taste.

Toast preparation:

  • Slices of bread can be heated in the toaster or in a dry frying pan until crisp.

Toast assembly:

  • Place a portion of fried mushrooms on each slice of bread.
  • You can sprinkle with grated cheese and heat in the oven to melt the cheese (optional).
  • Garnish with fresh parsley.
