INGREDIENTS

  • 300g fresh spinach
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 clove of garlic, chopped
  • 1 avocado, sliced
  • 100g cherry tomatoes, cut in half
  • 1/2 red onion, sliced into thin peaks
  • 50g feta cheese (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon

INSTRUCTIONS

Chicken preparation:

  • Season the chicken breasts with salt and pepper. Fry in olive oil until golden brown, about 5-7 minutes on each side. Set aside to cool and cut into slices.

Preparation of vegetables:

  • Mix spinach, avocado, tomatoes and onion in a large bowl. Add the shredded chicken.

Dressing:

  • Drizzle the salad with olive oil and lemon juice and season with salt and pepper. You can add crumbled feta for extra flavour.

NOTES

  • Chicken: To add more flavour, you can marinate the chicken in your favourite spices or herbs.
  • Extras: Add nuts (e.g. walnuts) or sunflower seeds for crunch.
