INGREDIENTS
- 600g of salmon fillet
- 2 medium courgettes
- 1 red onion
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 cloves of garlic, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
INSTRUCTIONS
Salmon preparation:
- Cut the salmon fillet into large cubes (about 2-3 cm).
Preparation of vegetables:
- Cut the courgettes into thick slices and the onions into quarters, separating the layers.
Marinating:
- In a large bowl, mix olive oil, lemon juice, garlic, oregano, basil, salt and pepper.
- Add salmon pieces and vegetables, mix thoroughly. Set aside for 15-30 minutes.
Assembling the skewers:
- Alternately stuff pieces of salmon, courgette and onion onto skewers.
Grilling:
- Preheat the grill to medium-high heat. Grill the skewers for 3-4 minutes on each side until the salmon is done and the vegetables are lightly browned.
Serving:
- Serve the skewers immediately, sprinkled with fresh parsley.

- Salmon: Make sure the salmon is fresh and well cleaned of bones.
