Instant vegetable salad is a classic Polish dish that combines a variety of cooked vegetables, eggs and canned peas. With the addition of pickled cucumbers and apple, the salad gains a unique balance of flavours - fresh, sweet and sour. INGREDIENTS
- 4 carrots
- 2 potatoes
- 1 parsley
- 1/2 celery
- 4 hard boiled eggs
- 1 can of tinned peas
- 1 apple
- 3 pickled cucumbers
- 3 tablespoons of mayonnaise
- 1 teaspoon mustard
- Salt and pepper to taste
INSTRUCTIONS
Preparation of vegetables:
- Cook the carrots, potatoes, parsley and celery until soft. Once cooled, cut into small cubes.
Mixing:
- Dice the eggs, pickled cucumbers and apple as well. Mix everything together with the tinned peas.
Sauce:
- Add mayonnaise, mustard, salt and pepper and mix well.
NOTES
- Apple: Adds freshness and a slight sweetness to the salad.
- Extras: Parsley or corn can be added for variety of flavours.
