INGREDIENTS
Chicken:
- 500g chicken breast
- 2 tbsp olive oil
- Juice of 1 lime
- 2 cloves of garlic, chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
Vegetables and accompaniments:
- 8 small corn tortillas
- 1 red onion, thinly sliced
- 1 avocado, sliced
- 1 cup chopped red cabbage
- 1/2 cup fresh coriander
- 1 lime, cut into quarters
Sauce:
- 1/2 cup sour cream or Greek yoghurt
- 2 tablespoons of lime juice
- 1 teaspoon maple syrup (optional)
- Salt and pepper to taste
INSTRUCTIONS
Chicken preparation:
- Cut the chicken breasts into thin strips. In a bowl, mix olive oil, lime juice, garlic, Roman cumin, smoked paprika, oregano, salt and pepper. Add the chicken, mix thoroughly and set aside for at least 30 minutes.
Chicken frying:
- In a large frying pan, heat the olive oil. Fry the chicken over a medium heat for about 5-7 minutes, until well fried and golden.
Sauce preparation:
- In a small bowl, mix sour cream (or Greek yoghurt), lime juice, maple syrup, salt and pepper.
Preparing the tortilla:
- Warm the tortillas in a dry frying pan or in the oven.
Assembly of tacos:
- Top each tortilla with a portion of fried chicken, chopped cabbage, avocado slices, red onion and fresh coriander.
- Sprinkle with lime juice and pour over the prepared sauce.
NOTES
Chicken: You can use chicken thighs instead of breasts to make the dish juicier.
Extras: You can add your favourite toppings such as tomatoes, cucumbers or corn to enhance the flavour.
Sauce: Add a little chilli to give the sauce a spicier flavour.
