INGREDIENTS
- 400g of pasta (fettuccine, spaghetti)
- 500g prawns, peeled and cleaned
- 3 tablespoons of butter
- 3 cloves of garlic, chopped
- 1 glass of cream cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup white wine (optional)
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
INSTRUCTIONS
Cooking pasta:
- Cook the pasta al dente according to the instructions on the packet. Drain, reserving half a cup of the pasta cooking water.
Shrimp preparation:
- In a large frying pan, heat the olive oil. Add the prawns, fry for 2-3 minutes until they turn pink. Remove from the pan and set aside.
Sauce preparation:
- In the same pan, melt the butter. Add the garlic, fry for 1 minute until fragrant.
- Pour in white wine, cook for 2-3 minutes until evaporated (optional).
- Add the cream cheese, lemon juice, salt and pepper. Cook over a low heat for 5 minutes until the sauce thickens.
Combining ingredients:
- Add the cooked pasta to the sauce. If the sauce is too thick, add some of the saved pasta cooking water.
- Add the prawns and grated Parmesan, stir until everything is combined and the prawns are warm.
Serving:
- Ladle the pasta onto plates, garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
