INGREDIENTS
Bread:
- 8 slices of wholemeal or rye bread
Beetroot hummus:
- 2 medium beets
- 1 can of chickpeas (400g), drained and rinsed
- 2 tbsp tahini
- 2 cloves of garlic
- Juice of 1 lemon
- 2 tbsp olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon of cumin (optional)
INSTRUCTIONS
Beet preparation:
- Wash, peel and dice the beetroot. Boil in lightly salted water until tender (about 20-30 minutes), then drain and cool.
Hummus preparation:
- Place the cooked beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, salt, pepper and cumin (if using) in a blender.
- Blend until smooth. If the hummus is too thick, add some of the beetroot cooking water or more oil.
Bread preparation:
- Slices of bread can be heated in a toaster or dry frying pan to make them crisp.
Hummus spread:
- Spread a generous layer of beetroot hummus on each slice of bread. You can garnish with extra olive oil, fresh herbs or seeds.
