INGREDIENTS

  • 4 salmon fillets (approx. 150g each)
  • 2 tbsp olive oil
  • 1 lemon
  • 3 cloves of garlic, chopped
  • 2 tbsp fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste

INSTRUCTIONS

Preparation of the marinade:

  • In a small bowl, mix olive oil, juice of half a lemon, chopped garlic, dill, parsley, thyme, salt and pepper.

Salmon preparation:

  • Place the salmon fillets in a shallow baking dish.
  • Pour over the marinade, rubbing the fish thoroughly on both sides.
  • Set aside for 15-20 minutes for the flavours to meld.

Baking:

  • Preheat the oven to 200°C.
  • Bake the salmon for 12-15 minutes until it is tender and flakes easily.

Serving:

  • Serve the salmon drizzled with the remaining lemon juice, topped with your favourite vegetables or salad.

  • Salmon: Make sure the fillets are fresh and well cleaned of bones.
