INGREDIENTS

  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 4 cloves of garlic, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • Fresh parsley for garnish

INSTRUCTIONS

Preparation of the marinade:

    • In a large bowl, mix olive oil, lemon juice, garlic, oregano, smoked paprika, salt, pepper and thyme.

Marinating the chicken:

    • Place the chicken drumsticks in the marinade, coat well with the spices and set aside for at least 1 hour, preferably overnight.

Baking:

    • Preheat the oven to 200°C. Place the chicken drumsticks on a baking tray lined with baking paper.
    • Bake for 35-40 minutes, turning the chicken halfway through, until golden and well cooked.

Serving:

    • Serve the chicken drumsticks immediately, sprinkled with fresh parsley.

NOTES

  • Chicken: Make sure the drumsticks are evenly coated with the marinade.
  • Marinade: You can add a little honey or brown sugar to the marinade for a sweet and spicy flavour.
